    中秋时,怎一个"吃"字了得

    昨天中秋,我和姐一早起来去买菜,准备好好FEED自己一番。我感觉南方人似乎比北方人更把它作为一个节日。从小到大,印象中中秋总是要去婆婆家和叔叔姑姑们团聚吃饭的,只是这两年来随着老人年岁增大,不再方便辛苦地做一大桌菜,因此都是小家庭在一起过。但过节前一定要跑老人那里“送节”。因此这已经成了我们家里的一个习惯,我也十分喜欢。今年又和往年一样,妈妈一大早买好了菜,8点多就来电话把我们吵醒问我们怎么过云云。
     
    其实我和姐早在上周就在盘算给自己做点什么,我们学着爷爷家以前的传统——逢重大事件节日都要列菜谱——也给自己小列了一个MENU。(想起爷爷奶奶真是讲究生活品质和情趣的人啊,如今都已故去,随了长江入海,回想以前的日子,不免心酸)
     
    好了,说说我们的菜单吧:
     
    1. 红烧鲫鱼
    2. 鹌鹑蛋烧红烧肉
    3. 木须肉
    4. 菠菜猪肝汤
    5. 葱爆绿豆芽
     
    本来还要做酒烧鸡翅尖的,后来觉得两人吃实在太多,便作罢。此外,我们还开了一瓶Carlsberg Chill啤酒。说到这酒,有点小插曲。因为喜欢CHILL的广告和它漂亮的瓶身而在家乐福买了几瓶,那天还买了NESTLE的矿泉水,回家后便直接用这水做了“鲫鱼蒸肉”,不知是否是心理作用,感觉更是鲜香可口;那昨天我们就用CHILL当料酒爆了盘墨鱼丝。呵呵~~有够奢侈啊,小小一瓶酒,单价7块9哦。
     
    姐的手艺着实不错啊,除了鱼是我做的(这可是我的拿手好菜,很欣慰自己能做自己最喜欢吃的东西),其他都是姐姐的劳动果实,不禁想尊她一声“尚宫娘娘”,哈哈~~~。不过遗憾的是做鱼时打碎了一瓶料酒,我就象演杂技一样,一手拿勺,一手拿料,踮着脚在充满酒香,洒满玻璃的厨房里成功把鱼做完。
     
    兴之所至,说说两道主菜的做法吧。
     
    红烧鱼是爷爷家必上的菜,原材料都要新鲜。根据家人教诲和自己的实践心得,最重要也最难的是要把鱼煎好,皮酥肉嫩,火候和时间定要把握好。然后放酒、酱油、盐、糖和少量水,再洒入红辣椒丝、葱丝(或蒜丝)以及姜丝盖锅焖就好了,火候适中,时间也不宜太长。
     
    至于鹌鹑蛋烧红烧肉则是源自婆婆家,我们通称其为“小蛋烧肉”。姐姐昨天表现相当不错!我们买了两斤左右五花肉(肥瘦兼有),31只小蛋(考虑到她那些颇具战斗力的同事们)。回来洗切好后,先用大火热油爆炒肉,以祛其肥腻,加入酒、酱油、糖、些须干辣椒,盐可加可不加,视酱油加入的量为准;然后和煮好剥好的小蛋一并倒如高压锅里,加入姜片和水压七八分钟左右即可。我们的感觉是如果是用生抽或老抽类酱油的话,上色很快,不宜入太多,要注意量。
     
    我这么写着,特别又回忆起在爷爷家的日子。他一辈子和中国画打交道,却最偏爱鳜鱼——也画、也买、也做、也吃。爷爷80几岁高龄依然会在雪天拄着拐杖去买百块钱一斤的新鲜鳜鱼;会力排他议,手撑着墙,亲自下厨房去煎几斤重的鳜鱼;绝的是他还能目测鳜鱼的重量,而且绝对差不多少。爷爷喜欢鳜鱼牡丹,说是富贵有余;奶奶亦爱鱼,但喜欢百合,说是百年好合。如今这一对一起走过50多年的人儿也已百年,更应好合了。过节的时候实在不禁想念,聊插几笔。
     
    好了,说到他们家,遗传似的,老爷子自己、舅舅们、姨们,当然还有偶妈,都是烧庖的能手,可以列一个长长的菜单——鳜鱼煮米粉、糖醋/红烧鳜鱼、猪油蜜制八宝饭、猪肝炖排骨、黄豆猪脚汤、芋头米粉肉、梅干菜扣肉、红烧蹄膀、炒蟹、年糕、牛肉芹菜炒粉。。。。。。啊!列到要流口水了~~~昨天电话跟小姨点十一的菜,要吃蒸螃蟹、炒螃蟹、红烧猪脚和她的拌粉~~~哈哈~~回去要饕餮啦!!
     
    怎么结束这篇谗谗的文章呢?中秋起的头,中秋来结个尾吧。俗话“月是故乡明”,昨天北京的月亮黄蒙蒙的,确是不敢恭维,远不如前天(十四)的皎洁纯净,抬头望那隐约月朦胧,我心里嘀咕着这不能算“享月”,该叫“想月”了。但我和姐姐依然晚饭后下楼走了走,毕竟是中秋啊,我们和家人看到的是同一轮圆月。
